【Culture】Beef noodle According to the author Shu Guozhi (Shū, Guózhì/舒國治), beef noodles are the common dish with the greatest Taipei character. In particular, “braised beef noodles (hóngshāo niúròu miàn… 更多 /紅燒牛肉麵)” or “Sichuan-style beef noodles” is Taiwan’s unique creation. From the 50s when the air force military dependents’ village reminisced about the delicious food of home, to the common dish popular across Taiwan in the 80s, beef noodles fully demonstrate the great hybridity of Taiwanese food culture. Starting in 2005, the “Taipei International Beef Noodles Festival” and the book Taiwan Beef Noodles: Serious Critique of 173 Restaurants by Jiao Tung (Jiāo Tóng/焦桐) in 2012 are both good starting places for a glimpse into the beef noodles’ culture of Taiwan.
