Tankan, grown by local farmers with organic farming methods, removes the bitter and acrid flavor on tangerine surface in hot water, that will be refreshed continually for several days. Then the pulp and the peel are blended together with sugar, simmered without water, and it will be diluted into juice. Tankan sauce might be used in cuisine or yogurt with tangerine flavor, and the way of eating it can be diverse and full of creativity.
